Vegan Quesadilla’s! (My own recipe)
These are pretty easy to make and taste great.
Ingredients:
2 tortilla’s or one to fold in half (I use wheat or corn)
Earth Balance Natural Spreads (or other vegan butter or a healthy oil)
Fresh spinach
Zucchini
Tomato
Soyrizo
Daiya Vegan Cheese
add other things if you’d like
Preparation and Directions:
Slice your zucchini and tomato in good sized slices and however much soyrizo you want to add out of the packaging and ready to throw on top. Let pan heat over a medium heat and add butter once hot enough. Add first tortilla and begin adding ingredients. Cheese first so it has a chance to melt. I don’t go in any particular order, though normally adding the spinach last. When adding soyrizo, just add little bits of it all around the tortilla. After adding the veggies and soyrizo, you can add a bit more cheese for good sticking, then add the last tortilla on top. Add more butter to the pan and flip! It shouldn’t take too long to cook but I burnt the bottom of mine (though it still tasted great). Just make sure to watch and check on it. Slice and enjoy with your favorite hot sauce or salsa!

Day 6: What is your favorite unhealthy food?

Sweet things. :x Like cookies and chocolate cake and cupcakes and candy and blah blah blaah. D: I really would love to not have an addiction to sugar, but it is so difficult to say no, or just have ONE cookie. Who has one chocolate chip cookie fresh from the oven?

No one.

So yeah. xD Really hoping to kick the sugar habit soon. But it is so damn hard.

Update: I got stung by a bee on Wednesday, right on the bottom of my foot, and it is still very swollen, itchy, and sore, and a dark shade of purple. Horrible allergic reactions ftw! But not really..anyway, I am so bummed because I’ve been wanting to run/go for walks so badly, but can hardly walk. I can’t wait until my foot is better! Gah. >:(

I would have to disagree with you in that vegetarianism is nothing like veganism. Choosing not to eat meat is a huge and important step that shouldn’t be looked down upon because someone hasn’t cut all animal products out of their diet (yet). I have been vegan before, and have done so much research on veganism. So yes, I do know that dairy products, eggs, etc. are not the best things for you, but I hardly eat them anyway.

So, I know in the future I will most likely switch to being completely vegan, but for now, I will occasionally indulge. And I choose not to feel bad about that, because I am doing so much already.

That is awesome! :D I always feel like 120 is the weight everyone wants to be at, but I just want to get to a weight that I feel the most comfortable. I have been 130lbs before, and I felt like if I had just lost five more I would have been exactly where I wanted to be! But thank you so much! ^-^ I hope that I will get to 125 soon!

Day 5: What is your favorite healthy food?

(Skipped 4 because I’m vegetarian already, so I didn’t think it was that difficult or important to go “vegan” for one day when I’m basically already living that lifestyle!)

Anywho! My favorite healthy food encompasses all veggies and fruits. Seriously, nothing is better or sweeter than fresh picked strawberries, or as creamy and delicious as a ripe avocado. It’s so hard to forget how good fruits and vegetables are because of all the unnatural sugar some processed foods have. :(

Now I am craving some watermelon hardcore! >:O
